

The global food guide TasteAtlas released its list of the Top 100 Chicken Dishes in the World, placing the Filipino favorite Inasal na manok at No. 3 with a 4.4 rating, as updated on April 15.
The dish, deeply rooted in the culinary traditions of Western Visayas, is widely regarded as a signature specialty of the region and one of the most recognizable grilled chicken preparations in the Philippines.
A distinct Filipino grilled classic
Inasal na manok features chicken cuts marinated in a mixture of vinegar and aromatic spices, including lemongrass, garlic, and ginger. The marination process is central to its flavor profile, producing a balance of tangy, savory, and subtly herbal notes.
During grilling, the chicken is repeatedly brushed with annatto-infused oil. This gives the dish its characteristic golden-orange hue and adds a mild peppery richness that sets it apart from other grilled chicken recipes globally.

In 2022, the city of Bacolod officially declared Inasal na manok as an important cultural property, underscoring its role in local identity and heritage.
